Happy Hour: Rum!

Happy hour – because all work and no play makes Jack (or anyone) a dull boy.

Rum because you can’t go wrong with the drink of summer vacation, the Nectar of the Pirates, and a favorite of Jimmy Buffet. (Ok you can go wrong if you overdo so enjoy in moderation…)

So without further ado, here are some great recipes for making my personal favorite holiday drinks.

Pina Colada

2 oz white rum
1 oz coconut cream
1 oz heavy cream
6 oz fresh pineapple juice
½ cup crushed ice

Blend all ingredients in a blender until smooth. Garnish with some fun fruit or tiny umbrellas and serve.

Mojito

2 oz white rum
1 oz. lime juice or 3 to 4 lime wedges
Mint leaves (a small handful)
Simple syrup
Club soda

Place mint leaves, limes and simple syrup into a glass and muddle.
Pour in the ice and rum. Add a splash of club soda and shake or stir. Garnish with mint leaves and limes.

Strawberry Daquiri

¼ cup White Rum
2 cups Frozen Strawberries (or fresh but frozen is great for frozen blended drinks)
2 tablespoons Freshly Squeezed Lime Juice (optional)
2 cups of Ice Cubes
¼ cup sugar (optional)

Put all ingredients in a blender and mix until smooth.

*Can be made with a mix of pretty much any fruit

Mai Tai

1 1/2 oz White rum
1/2 oz Fresh lime juice
1/2 oz Orange curaçao
1/2 oz Orgeat syrup
3/4 oz Dark rum

Shake all ingredients except the dark rum together in a mixer with ice. Strain into glass full of ice. Add the dark rum to the top. Garnish with cherries and/or pineapple wedges. Add a straw and maybe a fun little paper umbrella.
